I made an awesome potato leek soup with apples, that used cumin and paprika as spices. I will have to look up the recipe... Think it was 3 med. potato, cubed 3 leeks, whites only, chopped 2 apples, peeled cored, chopped 1-2T Cumin 1-2T Smoked Paprika
Saute Leeks, apples and spices in a little oil till tender, add spices, saute for another minute or 2
Add potatoes and some broth, and simmer till done. You can add cream if you like, or leave it vegan. I pureed mine into a thick bisque style soup. Yummy.
Why is it that they taste like dessert when you put them on the fire? When camping, we threw a bunch of sliced apples with some blueberries into some aluminum foil and threw it on the fire. When we pulled it out of the fire, we were practically fighting over each other to eat it all. It was the awesomest food ever!
